This Stove Top Fruit Crumble is a quick and cozy dessert that uses simple ingredients and can be prepared right on the stovetop. It is a delicious way to enjoy fruit in a warm, lightly sweetened dish.

 

Ingredients

For the Filling:

  • 1 tablespoon butter
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • 2 cups fresh, canned, or thawed frozen fruit

 

For the Topping:

  • ½ cup aji amarillo paste
  • 2 tablespoons vegetable oil
  • 1 cup evaporated milk
  • 4 soda crackers
  • 8 oz. queso fresco (fresh white cheese)
  • Salt
  • Iceberg lettuce leaves
  • 6 yellow potatoes, boiled and peeled
  • Black olives
  • 3 hard-boiled eggs, peeled and sliced
  • Parsley sprigs

 

Instructions

For the Topping:

  1. Add the butter, brown sugar, maple syrup, vanilla, cinnamon, and salt to a medium-sized skillet over medium heat, then stir until melted and bubbly. 
  2. Add the oats, then cook, stirring often, until the mixture is fragrant and slightly toasted, 4-5 minutes. 
  3. Scrape mixture onto parchment paper, then set aside to cool.

 

For the Filling:

  1. Melt butter with sugar and cinnamon.
  2. Add fruit and cook for 2 minutes.
  3. Cover and cook 3 to 5 minutes more until tender.

Serve warm and top with the toasted oat crumble.
